Though they became popular in the 2010s, one-dish food businesses have been around for thousands of years. The concept of one-dish food stalls existed already in ancient times, in places like China and Rome.

Today, many one-dish wonders are full-service restaurants with low operating costs, helping owners maximize their profits.

The restaurant proposition is clear and straightforward: offer only one dish, and make it perfect.

The one-dish wonder concept benefits not only the restaurant owner, but also diners who choose restaurants based on what they want to eat instead of where they want to eat. If they are craving donuts, they can go to Krispy Kreme, or Dunkin Donuts, and take their pick straightaway. They don’t have to browse long menus before ordering. Their options are right in front of them; they just have to point which flavor of donuts they would like. 

One-dish wonders are also beneficial for food courts. Commercial landlords focus on businesses that will give their retail spaces more versatility, and one-dish wonders can make that happen. On the other hand, one-dish wonder owners can operate in a high-foot-traffic location with minimal direct competition.

With regard to costs and profits, one-dish wonders can run on low operating costs because they have less inventory. Limited menu items also let you save on storage space and costs.

It’s a serious foodie conversation starter. You can notice it on social media, where users like talking about a new restaurant they just visited. If your one-dish wonder becomes viral or a trending topic, many people who have Fear of Missing Out (FOMO) will be prompted to go try your dish.

Let’s take a look at bubble tea shops. Bubble tea rose to popularity in the United States after the “Bobalife” music video by the Fung brothers went viral. More commonly known as boba tea, this Asian beverage has various flavors, like winter melon, jasmine, and oolong, to name a few. 

Boba tea’s global market size in 2019 was $2.02 billion. By the end of 2027, it is expected to reach $3.39 billion. Considering that boba tea has been around since the 1980s, it can be a bit puzzling why it took so long for the trend to turn globally mainstream. 

But it’s really no wonder why—boba tea is more than just cold milk tea with tapioca pearls. It comes in a variety of flavors and “sinkers,” like coffee jelly and pudding. Milk-free alternatives, such as fruit-flavored boba teas, are also available for the lactose-intolerant. 

Dining & Ordering Flexibility

Since they have a compact menu, one-dish wonders tend to be more flexible, which helps in creating variety and accommodating diverse tastes and diets. Think biryani meals, ramen bowls, tacos, or Korean sticky fried chicken.

Restaurants with long menus may not be as flexible because they need to control costs. Also, not all of their dishes may be suitable for takeout and delivery, unlike food developed for one-dish restaurant concepts. In fact, one-dish wonders can draw significant revenue from both in-house customers and online channels.

The One-Dish Wonder concept is also suitable for digital solutions like self-ordering kiosks and QR ordering. Self-ordering kiosks can help cut long lines, while QR ordering can streamline group orders and payments.

The simplicity, flexibility, and success of One-Dish Wonder concepts demonstrate that less can be more when you want to give diners the best. 

While numerous options remain highly appealing to many diners, quality almost always beats quantity. It may be much, much better to offer a single, perfect dish than numerous, less-than-memorable items.
